Ingredients:
- 1.5 glass of Fine Bulgur
- 2.5 glass of warm water (to wet bulgur)
- 4 fresh onions
- 2 sweet long pepper
- 1 mature tomato
- 6 dry apricots
- 50 g hazelnut
- 8-10 branches of fresh mint
- 6 tablespoons of natural olive oil
- 4 tablespoons of lemon juice
- Salt
- 2 bunches of roquette (by choice)
1-Let bulgur rest in warm water and absorb water and swell then, put them into wire screen. Clean fresh onions and chop into very small pieces.
2-Remove seeds of long peppers and chop into small pieces.
3-Peel the tomatoes and cut them into half. Remove the seeds with the tip of the knife. Chop them into small cubes. Finely mince fresh mint leaves with a sharp knife after chopping dry apricots.
4-Lightly break hazelnuts using side of the knife. Put all ingredients into an oval mixing cup and flavour it with lemon juice, olive oil and salt.
5-Carefully blend and put into serving cups.
